Our Story
Castel’s seven-course menu -like music- is intended to tell a story. Beginning small and simply, following a progression of notes, dynamics and flavorful styling… the characters crescendo and evolve into something grander & greater with each passing measure. Each course is crafted with European fine dining as a keystone. Eastern flavors mingle with those of Germany, France, & Spain, bringing dishes to the table that are as unique as they are familiar.
Our name alludes to Castell, a small town in the hill country, along the Llano river. Many of our Texan roots can be found and felt along that river. Visiting there today, one would see that time has not much changed Castell. It represents a part of Texas that is constant.
For us that part is: Home.
A native Texan, Chef Travis Bugge graduated from the CIA in Hyde Park, kickstarting his culinary career in the ranks of New York City’s Michelin-starred restaurants before returning home to champion Austin’s budding food scene in 2014. Uchiko & Barley Swine are of note, as well as opening teams of Old Thousand and The Brewers Table.
Castel’s founder became interested in food at an early age, with his father cooking the family's nightly dinners from scratch. Simple, sustaining, & unifying. This is what our team aims to bring to the table with every dinner Castel provides.
